2 tablespoons olive oil
1 pound shrimp, peeled and deveined
Salt and black pepper to the taste
2 tablespoons lime juice
3 endives, leaves separated
3 tablespoons parsley, chopped
2 teaspoons mint, chopped
1 tablespoon tarragon, chopped
1 tablespoon lemon juice
2 tablespoons mayonnaise
1 teaspoon lime zest
½ cup sour cream


1. In a bowl, mix shrimp with salt, pepper and the olive oil, toss to coat
and spread into the Slow cooker,

2. Add lime juice, endives, parsley, mint, tarragon, lemon juice, lemon
zest, mayo and sour cream, toss, cover and cook on High for 1 hour.

3. Divide into bowls and serve.
