8 ounces bacon, cooked and chopped
2 tablespoons olive oil
1 cup yellow onion, chopped
8 ounces lentils, dried
2 carrots, chopped
12 parsley springs, chopped
Salt and black pepper to the taste
2 bay leaves
2 and ½ pounds chicken pieces
1 quart chicken stock
2 teaspoons sherry vinegar


1. Grease your Slow cooker with the oil, add bacon, onions, lentils,
carrots, chicken pieces, parsley, bay leaves, stock, salt and pepper to the
taste, stir, cover and cook at High for 4 hours

2. Transfer chicken to a cutting board, discard skin and bones, shred meat
and return to the slow cooker, add vinegar, stir, divide between plates
and serve.
